Crawfish Gouda Casserole Recipe


  • 1 can Robin’s Original Crawfish Étouffée
  • 3 cloves garlic crushed
  • 3 tbsp butter
  • 3 tbsp flour
  • 3/4 cup milk
  • 1/2 - 1 lb Gouda cheese grated
  • 3 egg yolks, slightly beaten
  • 1/3 cup white wine
  • Salt, red pepper to taste
  • TABASCO® Brand Pepper Sauce
  • Bread crumbs

Mash crushed garlic cloves into butter at least one hour before using.  Melt butter mixture (save some for topping) over medium heat. Add flour, milk and a small amount of grated cheese. Beat egg yolks and add to cheese mixture stirring constantly. Add wine, salt, red pepper and TABASCO®. Add Robin’s Crawfish Étouffée to this cheese sauce, mixing well. Place in casserole dish. Toss together the rest of the butter mixture, cheese and bread crumbs. Top the casserole with this mixture. Bake at 400° until bubbly and cheese topping is slightly browned. Serves 8-10.
